Is it possible to change the domain Openfire is using? Existing install is servicing a domain that is no longer active. Any documentation would be helpful.

Any change of the domain with result in orphaned data, as the data is linked to JID which is comprised of the username + @ + domain. You would need to do extensive data scrubbing to relink the data in the database. You can change the settings by rerunning the config by editing the openfire.xml setup tag to read false
