I have seen the FastPath plugin but that’s still truly a real chatroom. Are there any plugins out there that will allow me to run a chatroom off of openfire?
I am not sure what you are trying to do. Openfire has native support for chatrooms (or multi-user chat as it is also called). You do not need any plugin for that.

are you looking for a HTTP based chat solution like SparkWeb http://www.igniterealtime.org/projects/sparkweb/index.jsp or for a HTTP based MUC solution like http://www.igniterealtime.org/support/group_chat.jsp (which is as far as I know still closed source)?
