Tell me please which table in database stores history of MUC rooms and how often Openfire server update the table?

It is probably in the ofMucConversationLog (http://www.igniterealtime.org/builds/openfire/docs/latest/documentation/database -guide.html)

Interval can be set at Group Chat > Group Chat Settings > press on a conference service > Other settings - Flush interval
