I have installed Openfire chatserver ver. 3.5.2 and have friends using spark client ver. 2.5.8.

We cannot enable chatrooms regardless of user type.

Is there a tutorial or specific instructions out there on this subject?

I have configured a chatroom on the server side and am unable to locate it from the client.

This is one of those situations where you need to have your server configured with a Fully Qualified Domain Name to easily access a feature. All your group chat rooms would be located at the default name of conference. This is added to the FQDN of the server like conference.chatserver.domain.com.
