For the second time now, I am having the problem where the server is not accepting any connections. I’ve tried re-installing the application, but that isn’t getting it working.
Is there a way to remove openfire completely?

The method of removal is different for every OS. In short run the unistall for whatever OS you have it on, then manually delete the remaining folders.
