Is there a way to be online and not accept messages? For example, we have some users within our department that do not want to handle the amount of Instant Message windows they’'d be getting if they were to use this service. Is there a way to give them more privacy as to who can chat/see them online, etc?

Spark does not have a gui to configure a privacy list but ad-hoc commands (F12 within Spark) and reading http://www.igniterealtime.org/forum/thread.jspa?threadID=21886 should help a bit.
