Can I somehow delete a grup chat conversation history under the conferences. I saw somewhere I can delete all of it (as I remember) but I want to delete just one group.

You can’t, other than deleting that room and creating again.
To hide the history in a particular room you can go to this room’s settings and uncheck Log Room Conversations, then restart Openfire. It won’t show the old history for that room (until you check Log Room Conversations again).

No, there is no history deletion via cli. If you mean database, then it is probably possible. But editing database directly is not recommended. Can’t tell anything else.
