Is there any way to backup the list / configuration i made?

E.g. like Pandion, who saves the information in an external xml-file.

afaik at least the contact list is stored on your xmpp server

and where is it stored? In an external file or within the database?

Need to locate and access these files.

they are stored in the database … however you can access them directly (eg. via mysql) or you can use the importExport Plugin (http://www.igniterealtime.org/projects/openfire/plugins/userImportExport.jar) that can export (and import) the entire list in a xml format (but afaik without exporting the groups yet)
