I have several users that use 2 computers throughout the day. Is there a way where the users conversations that were sent/received from 1 computer, can be access from the other computer?

In short, you can’t. There is a problem with syncing incoming messages and for sent messages you have to use a client which supports such syncing.
Do you know of any such clients for windows that would allow syncing utilizing the XMPP protocol?
No, i haven’t. Btw, mesaage carbons XEP only covers sent messages. You would still be missing outgoing messages. The only client i have tried which supports message carbons was Yaxim for android.
