How can I connect to an other server, like jabber.org. I can’t find anysting that can help me.
Is there anybody who can tell me what I have to do? Is it posible?

Assuming that you want a server to server connection, where you@your.fqdn can talk to her@jabber.org, take a look at Server To Server HowTo’s. A couple of things worth noted: there are some public servers out there that requires your domain to be resolveable through DNS SRV, and some requires your server to have a valid CA-signed certificate (e.g. GoogleTalk).
