IntelliJ primarily.

Ive been using NetBeans lately, and have been quite happy with it. There are a few out there using Eclipse, too. In all cases, getting Openfire to build is a pretty easy setup, so pick the one you like best. Or, skip the IDE entirely and just use “normal” editors (thats how I deal with Smack and Spark).
