What are the opensource rights for us to be able to distribute openfire with our software?

did you miss to read the GPL license http://www.igniterealtime.org/builds/openfire/docs/latest/LICENSE.html ?
Maybe you want to use Openfire 3.7 instead of 3.4 as it will have an Apache 2.0 license. Anyhow you should consult a lawyer to make sure that you don’t violate the license.

In general, you should be fine with the Apache license for bundling.
