The best thing to do is to not use Excel to edit XML files. I would recommend using a basic text editor like Notepad or one of the free XML/text editors you can download from the Internet.

I use & highly recommend Notepad++ from http://notepad-plus.sourceforge.net
It makes it much easier to edit text files for pretty much any scripting/machine/markup language.
Checkout the screenshots on the website… But trust me, it makes editing xml, html, javascript etc… ALOT easier.
