I have installed the RPM of Openfire on SuSE Linux 10.2, and it seems as though the installation went well … I could go through the setup process without any errors. However, I did a reboot on my server and noticed that if I goto mydomain:9090 the setup process starts over. Any ideas what I may have done wrong ?

I assume that the start script fails to set the right $OPENFIRE_HOME directory so you are asked to run the setup again. And as the directory is wrong it can not store the new configuration as it has no permissions to do so.
Take a look at the script in /etc/rc.d/init.d/openfired or whatever it is called and try to fix it. Or write your own start script, it seems that this problem will never really be solved.
I did post some instructions in http://wiki.igniterealtime.org/display/WILDFIRE/LinuxInstallationGuide which are quite old but in my opinion still much better than using the default scripts.
