Can we interconnect an existing OpenFire server to a separate OpenFire enterprise server so that users of both servers can communicate with each other?

Openfire users can communicate with other Openfire users, other XMPP servers and even with users of MSN, Yahoo, Gtalk, etc. You can update any Openfire installation to the Enterprise Edition by just installing the enterprise.jar plugin file. That means that the answer to your question is yes.
