I’d like to know if there’s a way to move the openfire database to another server to avoid me having to setup all Spark users / groups again.

If you are using the embedded database, then it should be in /openfire/embedded-db folder (this can depend on OS you are using). You can copy this folder to the new server, as well as /conf (stores settings) and security folder (which is holding certificates if you use ssl). Actually you can just copy the whole openfire folder.
You could try using the User Import/Export plugin to dump your users/rosters and then load them into the new server
Though this won’t export groups.
