Is there any guess as to when 4.6.0-beta will go to general release?
Typically, a full release happens within a few days to weeks after a beta. No promises though.
You can help speed things up by giving the beta a try and providing feedback.

Should I just replace my /usr/local/openfire?
I wouldn’t do that. Follow the upgrade guidelines in http://download.igniterealtime.org/openfire/docs/latest/documentation/upgrade-guide.html
Basicaly: backup everything and use your distribution system to update the installed application.
