Depends on OS running it, number of users, what plugins you need, database you are going to use (and if it’s going to live on the same box as the application).
I’ve got a couple of thousand users with an external Oracle database and Openfire itself uses next to no resources - Maybe 256Mb of RAM for the JVM, but that’s it.
