I’m interested in doing real time antivirus scanning of file transfers occurring in Spark (through any and all of the transport protocols). I was wondering if anyone has tried to set this up or if it’s even possible using Openfire. Thanks for any input.

you may be much more save by disabling file transfers completely.
You could use one of the file transfer plugins to disable p2p file transfer and in-band so the user must use a proxy. See http://www.igniterealtime.org/support/articles/filetransfer.jsp for more details. So you’d need to modify the proxy to scan the file.
