Hi,
if you really want p2p connectivity than you don’'t want to use xmpp.
The connections are already encrypted, a secure p2s2p connection is anyhow not possible so far, so the server administrator can monitor all traffic.
It may be possible to tunnel VNC in the xmpp protocoll so if one has some spare time to do this we may see this soon.
