I have two servers, people who are on one server can chat with people on another one in both direction 1->2 and 2>1 but cannot see the presence status of their interlocutor still offline while it can chat.
May be a parameter in the config or a plugin to add?

as soon as both users are subscribed to each other (subscription=both) the presence packets should be exchanged without any issue. As it is working usually I wonder if you see errors in the servers log files.
I assume you are not using presence lists, these could block the presence packets.
