Is there a preferred version of SQL (2016, 2019, 2022)?
Do you, the vendor, need to assist in any fashion?
Can you provide documentation on supported versions?

To take away any confusion: we’re not a vendor per se, this is an open source community that produces Openfire free of charge. There is a directory of service providers that you can approach for commercial support offerings. You will find that directory here: Ignite Realtime: Support - Professional Partners
Openfire does not explicitly standardize on any particular version of SQL server. The expectation is that Openfire will work with any of these versions. For what it’s worth, our automated tests use 2019.
